Ingredients:- 1 1/4 cups pumpkin puree, canned or fresh
- 3/4 cups sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon all-purpose flour
- 2 eggs, lightly beaten
- 1 cup evaporated milk, undiluted
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
- 1 unbaked pastry shell (9-inch)
Directions:- Comibne pumpkin, sugar, salt, spices, and flour in a medium sized bowl.
- Add eggs; mix well.
- Add evaporated milk, water, and vanilla; mix well.
- Pour into pastry-lined pie pan.
- Bake at 400 degrees for 15 minutes, reduce to 350 degrees and bake for about 35 minutes, or until center has set.
Ingredients:- 1 cup instant rice, uncooked
- 2 1/2 cup milk
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/2 cup sugar
- 1/4 cup raisins
- 2 slightly beaten eggs
- 1/2 tsp vanilla
Directions:- Mix first six ingredients in a saucepan, and bring to a boil, stirring constantly.
- Reduce heat, cook 15 minutes.
- Pour into eggs and beat quickly. Add vanilla.
- Let cool 10 minutes.
Ingredients:- 1 box elbow macaroni
- 1 tablespoon vegetable oil
- 1 1/2 ounces Velveeta cheese
- 3 heaping tablespoons cottage cheese
- 1 can tomato sauce
Directions:- Cook macaroni according to package directions. Drain.
- Mix in the oil, cottage cheese, velveeta cheese, and tomato sauce.
- Cook in oven (350°) for about 1/2 hour, or until cheese is melted and macaroni is heated through.
This is very similar to Aunt Robin's Macaroni and Cheese. In fact, it is her recipe except that I goofed the first time I ever made it and mixed in the cottage cheese. Aunt Robin's recipe had the cottage cheese layered on the top.
Ingredients:- 1 cup confectioner's sugar
- 2 1/2 cups vanilla-wafer crumbs
- 1 cup finely chopped walnuts
- 1/4 cup bourbon
- 2 tbsp unsweetened cocoa
- 3 tbsp corn syrup
- 1/2 cup confectioner's (in small bowl)
Directions:- Sift together cocoa and confectioners' sugar.
- Combine bourbon and corn syrup; stir into cocoa and sugar.
- Add vanilla wafers and nuts; mix thoroughly.
- Roll mixture into small balls.
- Roll balls in confectioners' sugar.
- Store in tightly covered container.
Ingredients:- 1/2 lb white cream cheese
- 1 cup shortening (best to use half butter, half Crisco)
- 2 cups sifted flour
- 1 cup 4x sugar (approximately)
- maraschino cherries, pecan halves, dates, etc.
Directions:- Mix cheese and shortening with fork.Mix in the flour with your hands.Chill several hours.
- Roll out 1/8" thick on cloth-covered board covered with the powdered sugar. The dough will absorb about 1 cup.
- Cut into strips 1/4" wide.Roll up cherries (or pecan halves, etc.) Place folded side down on ungreased cookie sheets.
- Bake at 375° for 15 minutes.
