Pumpkin Pie

Ingredients:
  • 1 1/4 cups pumpkin puree, canned or fresh
  • 3/4 cups sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon all-purpose flour
  • 2 eggs, lightly beaten
  • 1 cup evaporated milk, undiluted
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract
  • 1 unbaked pastry shell (9-inch)

Directions:
  1. Comibne pumpkin, sugar, salt, spices, and flour in a medium sized bowl.
  2. Add eggs; mix well.
  3. Add evaporated milk, water, and vanilla; mix well.
  4. Pour into pastry-lined pie pan.
  5. Bake at 400 degrees for 15 minutes, reduce to 350 degrees and bake for about 35 minutes, or until center has set.

Rice Pudding

Ingredients:
  • 1 cup instant rice, uncooked
  • 2 1/2 cup milk
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup sugar
  • 1/4 cup raisins
  • 2 slightly beaten eggs
  • 1/2 tsp vanilla

Directions:
  1. Mix first six ingredients in a saucepan, and bring to a boil, stirring constantly.
  2. Reduce heat, cook 15 minutes.
  3. Pour into eggs and beat quickly. Add vanilla.
  4. Let cool 10 minutes.

Sandi's Macaroni and Cheese

Ingredients:
  • 1 box elbow macaroni
  • 1 tablespoon vegetable oil
  • 1 1/2 ounces Velveeta cheese
  • 3 heaping tablespoons cottage cheese
  • 1 can tomato sauce

Directions:
  1. Cook macaroni according to package directions. Drain.
  2. Mix in the oil, cottage cheese, velveeta cheese, and tomato sauce.
  3. Cook in oven (350°) for about 1/2 hour, or until cheese is melted and macaroni is heated through.
This is very similar to Aunt Robin's Macaroni and Cheese. In fact, it is her recipe except that I goofed the first time I ever made it and mixed in the cottage cheese. Aunt Robin's recipe had the cottage cheese layered on the top.

Bourbon Balls

Ingredients:
  • 1 cup confectioner's sugar
  • 2 1/2 cups vanilla-wafer crumbs
  • 1 cup finely chopped walnuts
  • 1/4 cup bourbon
  • 2 tbsp unsweetened cocoa
  • 3 tbsp corn syrup
  • 1/2 cup confectioner's (in small bowl)

Directions:
  1. Sift together cocoa and confectioners' sugar.
  2. Combine bourbon and corn syrup; stir into cocoa and sugar.
  3. Add vanilla wafers and nuts; mix thoroughly.
  4. Roll mixture into small balls.
  5. Roll balls in confectioners' sugar.
  6. Store in tightly covered container.

Cream Cheese Cookies

Ingredients:
  • 1/2 lb white cream cheese
  • 1 cup shortening (best to use half butter, half Crisco)
  • 2 cups sifted flour
  • 1 cup 4x sugar (approximately)
  • maraschino cherries, pecan halves, dates, etc.

Directions:
  1. Mix cheese and shortening with fork.Mix in the flour with your hands.Chill several hours.
  2. Roll out 1/8" thick on cloth-covered board covered with the powdered sugar. The dough will absorb about 1 cup.
  3. Cut into strips 1/4" wide.Roll up cherries (or pecan halves, etc.) Place folded side down on ungreased cookie sheets.
  4. Bake at 375° for 15 minutes.
